There is a strong case that says every butcher is judged by their sausage. Making sausages is often described as an art form, but we like to think it is more like magic than anything else. Taking offcuts, and then using a combination of technique, and creativity, to produce a mouth-wateringly tasty pork sausage is pretty damn close to meat magic in our opinion.
