Cooking tipsPreparation is key to crispy crackling. Dry the skin thoroughly with kitchen towel then generously rub sea salt into the scored skin, cover and put back in the fridge for at least 4 hours but preferably overnight. Take out of the fridge at least 60 minutes before cooking, rub with sea salt again and then roast.
