Product Description

Bavette steak is cut from the flank, which makes for a more fatty, but very tasty steak. Popular across France, this traditional old fashioned cut has made a comeback in British menu's in recent years for it's strong flavour. Traditionally cooked by slow braising, it is more popular now as a regular steak cooked quickly on a high heat with bags of flavour. A firm favourite of celebrity TV chef Tom Kerridge.

Cooking tips

Bavette is best served rare to medium as it is too thin to be cooked well-done.

I've just received my second order of bavette after about three weeks (another 6kg!) It's absolutely delicious. I've cooked mine in various ways - fried to medium rare and cut across the grain is truly sumptuous. It's delicious slow roasted too; my current favourite is to cook both steaks (1kg) as though it's a whole joint. I rub into the meat on both sides a mix of cumin, celery seeds, mustard powder, smoked paprika, chilli flakes, garlic powder and salt. I then sear both sides for a couple of minutes in a smoking hot pan. I then remove the bavette and fry a couple of thinly sliced big onions with a good dose of tomato purée and a good amount of brown sugar. Once these have wilted I place the meat back on top and fill the pan half way with pineapple juice and the rest, almost to the brim, with beef stock. I then cover it foil and whack it in the oven at 150°C for 3.5 hours. The result? A delicious American style BBQ piece of delicious, melt-in-th-mouth beef with a beautiful rich sauce to smother it in!

I was a little bit worried when I placed the order for two of these as I know that flank steak (bavette) is often quite tough and chewy but I wanted to cook it medium rare in the pan. I needn't had worried, this steak was tender of full of flavour. I will say that ideally you need to cut it across the grain when serving to really bring out the tenderness, but for the price it's an excellent cut of beef. Also, although you might expect it to be too thin a cut to pan fry to rare/medium rare, it's actually much thicker than it looks, just due to the size (it's massive) it makes it appear thinner than it actually is.

Excellent quality meat, pan fried with some seasoning a few minutes each side and it's perfect. Tried with 2kgs to start and just bought another 5.

I decided to try this cut of steak, which I was dubious about.But I'm glad I did. Absolutely fantastic. I fried it on either side for 6 mins & added steak seasoning & it was a perfect medium after warming in a 150° oven for 10mins. It was that good, I just ordered another 5kilos
