The Featherblade steak is taken from the shoulder of the cattle, and is named after the 'father' like tissue running through it. Far more versatile than it is given credit for here in Britain, it is more popular in Europe and across in the USA, where it is served grilled on the BBQ.

Cooking tips

As it is such a small muscle it’s really important it’s allowed time to rest properly after cooking, so it doesn't toughen up.
