Beef Stroganoff

A simple straight forward meal, which is perfect as a midweek dinner because it involves minimal prep-time. You can use Mince beef instead of stir fry strips if you prefer, and the brandy is not essential, but does add a luxurious twist.
- 500g beef stir fry strips
- 2tbsp olive oil
- 1 tablespoon paprika
- 250g mushrooms
- 6 spring onions
- 150ml crème fraiche
- 1 tbsp brandy
- 2 tbsp chopped fresh parsley
- salt & pepper
Heat 1 tablespoon of olive oil in a heavy based frying pan and stirfry the meat for 2 mins until sealed, then remove from the pan
Add the other tablespoon of oil to the pan and fry the mushrooms and spring onions for 2 mins
Return the beef to the pan and add the paprika and cook for 1 min
Stir in the crème fraiche, brandy, parsley and seasoning to taste and heat through
Serve with rice or egg noodles, and a green salad
