There is a strong case that says every butcher is judged by their sausage. Making sausages is often described as an art form, but we like to think it is more like magic than anything else. Taking off­cuts, and then using a combination of technique, and creativity, to produce a mouth-wateringly tasty sausage is pretty damn close to meat magic in our opinion You need to know an awful lot about ratios, such as fat to meat and salt to pepper, and knowing a lot about spices is a definite help as the word sausage derives from the Latin salsisium, meaning something that has been salted. Sausages hold a special place in the hearts (and mouths) of most Brits mainly because of the fact they are, (and hopefully always will be), a good way to make a quick, easy family meal.
