Lean and tasty, what makes our burger really special? That’s pretty easy, in our opinion. It’s getting a Great British Meat Co. master butcher to trim whole cuts of forequarter and flank from some tasty British beef that’s been hung in the raging fridge, and mixed with the perfect amount of seasoning.

It’s one of our best sellers with chefs and gastropubs alike, for good reason, it’s an amazing tasting burger. This is a butchers burger made by someone with expert knowledge of meat, not a mass produced imitation. You might pay a few pence more than you would in the supermarket, but you’ll more than make up for that in flavour, and with less shrinkage in the pan, you’re getting a beefier burger for your money.

The last few years has seen a swell of burger hype, with the media and even politicians wading in on things. Some restaurants, gastropubs and street food vendors will charge over £15 for the simple pleasure of a special burger. They’ll dress it up in some cool meaty marketing spin, telling you it’s a special custom-blend from cut X of beef balanced against cut Y which gives you just the right taste when it’s blended together by them. Unfortunately most of that is just chef’s looking to make a name for themselves caught up in a whole whirlwind of hype. As one of our butchers who’s been cutting for over 30 years put it recently “They’re Hysteria Hamburgers and don’t deserve the word Beef in their name” - well said that man!

The simple facts about a really special burger is that you don’t need fancy schmancy cuts of beef. What you need is hard-working beef muscles, that are a bit tougher as they are the cuts that have more muscle tissue (myoglobin) which enhances the flavour. At Great British Meat Co we think ‘chuck’ meat ground through the mincer is the best for this. Some butchers might use some lean leg, but we stick to chuck, and in any blind tasting we’ve ran with customers, chefs, and more importantly with our kids at home, they all agree that we’re right. It’s probably best not to tell the fancy burger joints though, let’s just keep this between us.

Cooking tips

Start with a clean grill to stop it smoking. Make sure the burgers are at room temperature (remove from the fridge 45 minutes before cooking) before putting then on a hot grill or pan. Flip and turn a couple of times to avoid burning, let rest for 5 minutes on a warm plate and put cheese on while resting if using.

These burger are amazing! They make it impossible to go back to buying burgers from a regular supermarket so they're regularly on our list when we place an order! They're beautifully thick and juicy and 2 make for a quick, healthy, high protein dinner. Perfect for after training.
